Vegetable Soup DIRECTIONS Heat the oil and butter on medium in a soup pot. Sauté all veg except the potatoes for 3-5 minutes. Add vegetable stock, water and potatoes. Season with salt and pepper (to taste) and bring to the boil. When the soup boils, cover and reduce heat and cook on a gentle boil until the potatoes are tender, approximately 15 minutes. Add parsley just before potatoes cook. Season to taste and serve. Store airtight in the fridge, and reheat as required. |
