This is a satisfying winter soup made with fresh vegetables. Simple and delicious.
Chop onion, slice carrots, trim green beans, peel and chop potatoes, chop leeks.
Heat the oil and butter on medium in a soup pot. Sauté all veg except the potatoes for 3-5 minutes.
Add vegetable stock, water and potatoes. Season with salt and pepper (to taste) and bring to the boil.
When the soup boils, cover and reduce heat and cook on a gentle boil until the potatoes are tender, approximately 15 minutes. Add parsley just before potatoes cook.
Season to taste and serve. Store airtight in the fridge, and reheat as required.
